This workshop is organized within the framework of WP 20 "Integrity of complex foods: innovation in analysis and communication" and is going to present a set of PCR based analytical methods and discuss their use in the process chains for the production of the two complex foods analyzed: bolognese sauce and raw ham tortellini.
